this morning I woke up and decided, "you know what? I'm making those blueberry doughnut muffins I bookmarked ages ago!" so I walked a few blocks to the local PathMark, bought the needed ingredients, then lugged them all the way back home.
all by myself.
was it a smart idea to go by myself? hm, probably not considering the close encounter I had with some drunken fellow on the way back. but that's for another day. where were we? oh yes. doughnut muffins.
I can't remember how I stumbled on this recipe. it was either foodgawkers.com or something on Pinterest but man oh man, is this onneee amazing muffin. tis was easy peasy and the cleanup time probably took longer than the assemblage.
please do yourself a favor, and spare those few dollars for baking cups. if you're
yeah, so I'm not really going to post the recipe here because it's not exactly mine. BUT I will link you at the end. so really this post is just me blasting you with extra large pics of blueberry muffins. you can thank me later.
DON'T IT LOOK LOVELY? the reason I made these muffins was cause I had never had muffins with glaze and thought it'd be fun to try. the glaze didn't turn out with the consistency that I had hoped it would (which is why it doesn't show up on camera) but now I've figured out the trick. more sugar + less liquid = thicker (and whiter) glaze. duh, Ariel. it still turned out perfectly delicious though and that's all that matters. right?
the second the muffins popped out the oven, I devoured one sans glaze. here are the lovely remains. yes, it was heavenly. and yes, the angels rejoiced.
see this gorgeous blueberry? it was eaten right after I took this picture. RIP fat blueberry.
