Fatty Friday || So... I'm Serious About That Diet. Really.

I'm so serious about it that I made this:



I know what you're thinking, "WHAT ISSS THAT?!1! is that even edible?!!"  I bet my photography skills just make you want to cry, right? I know, I know, it makes me want to cry too. I'm just mad talented, what can I say? I mean, just look at the photo! it's beautiful. so much contrast going on between the one spot of glowing, misty white stuff to that pitch dark blob, and that other pitch dark blob, oh and did I mention that pitch dark blob? gorgeous. I promise you the pictures get better. I just can't help it that whenever I make something delicious, I fly through the picture taking part because all I wanna do is eat it.


anyway.

so. about that diet. I was so serious about it I didn't make fettuccine alfredo... no, I made light rotini alfredo. and no, rotini do not have less calories than fettuccine, I just didn't have the pasta on hand. don't kill me for it. the recipe is "light" because instead of using heavy cream as a normal alfredo recipe would call for, I used reduced fat cream cheese and a whole lot of Swiss (I know I know, for the love of food and all things in that heavenly realm, who in their right Martha Stewart mind puts Swiss in alfredo?!! shhh, but in my defense, Parmegiano-Reggiano is expensive and hard to come by in your local PathMark, so there).


ohmigoodness. the pasta is floating in mid-air. hahaha

a big hug and thanks to Anna who gave me a little push to make some chicken alfredo. I remember thinking it sounded appealing, but I was like ehh, I'm not the biggest fan of meat dishes per se (though I do enjoy my BBQs and a good hamburger from time to time), so what if I turned it to a pasta dish and made fettuccine alfredo instead?



slightly off topic ramble: if I was told to pick only one thing to eat for the rest of my life, it'd hands-down be pasta. no questions asked. I can hear some of you, especially you Efan, screaming at the screen, "NO YOU'RE WRONG! IT HAS TO BE SUSHI ALL THE WAY!" sorry, but no. unless this is restaurant-made sushi, top-notch stuff, I'm positive I will get sick of sushi. I did eat it for a couple days straight before and contrary to what might think, it was not good. not at all. sushi, to me, is a once in awhile affair. not to worry, it still holds a speshul place in my heart.

paha. tangent.

a month passed before I finally made this dish because I couldn't help think about all the carbs and calories floating around in such a heavy comfort dish and ending up in my belly. the right time came when Laura Vitale, a foodie/chef/Youtuber, posted a recipe for a "light fettuccine alfredo". AHHH. just my luck. I looked up the ingredients, raced to the nearest PathMark, and the rest is history.



a few ingredients and steps make up this simple recipe. I'll explain in three sentences (one that will be a run-on hehe). you ready? 1. cook your pasta in a pot. 2. grab another pot or skillet, cook your ground chicken in it, season chicken with salt&pepper, add a Tbsp of flour, wait thirty seconds, dump chicken stock in, wait a couple minutes til it thickens, add 1/4 Tbsp reduced fat cream cheese, 2 Tbsp parsley and as much Parmesan you want. 3. mix the sauce into the noodles. see? three(ish) easy peasy steps to a beyond savory dish. amazing. get the recipe right HERE.
