that's the first question daddy asks me when he and my mummy walk through the door after being out all day, teaching a workshop at church.

oh nevermind, we all know food is more important than i am.
alright, let's get started, shall we? i first laid eyes on this amazing recipe through the email gojee sent me. (don't know what gojee is? it's basically a site where you can search recipes by ingredients you have or don't have/dislike. sign up for it right here.) it was the top favorited (yes, i just made that word up) dish of the week and the second i saw it, i pointed at the screen and declared that this dish would be my next victim. what is this dish? without, further adieu, i give youuu the amazinggg stuffed shells with spinach and ricotta!

i thought i had taken a lot of pics. but after i looked at them..i really did not...oops. anyways, walk through time. super, duper easy. read the bold to skip my nonsense talk.
what you need:
as however many jumbo shell pasta (15-25 to feed six)
2 Tbsp olive oil
parmesan cheese
1 cup marinara sauce
for the filling:
2 cups ricotta cheese
2 cups frozen spinach, thawed, drained and chopped
1 shallot
1 egg, lightly beaten
salt and pepper, to taste
okay, step one. cook the shells. don't put too much. i think half the box would've been enough. but...i was bad at judging and used the entire thing. now...i have a ton of leftover waiting to be eaten. maybe i'll just eat one shell a day. hehe. make sure you don't overcook them. 15 minutes should be sufficient. they've got to be...ahem, al dente. how's that for my food vocab? martha stewart ain't got nothin' on me!
step two: drain shells when done and put into a nice bowl. take two tablespoons of olive oil and pour on the shells.
step three: mix together all the filling ingredients and it should look like the bowl on the right. aka the white and green mess.
step four: preheat your oven to 350 and take your marinara sauce and spread it on the bottom of a baking pan.
step five: stuff the shells lightly. don't overstuff it. seriously...not a good idea. line them up in the pan as best as you can, so they fit snugly side by side. do not stack them.
step six: sprinkle some parmesan over it and wrap aluminum foil nice and tight around it. bake 20 minutes. take it out, and take off the aluminum and bake another five minutes.
step seven: let it cool for a couple of minutes and enjoy! gah, i don't like it for some reason when all food stuff ends with "enjoy!" so...let it cool for a couple of minutes and pig outt like yo mama never taught you your eating mannerisms. hm, wordy&nonsensical...but better.
