for this fatty thursdayy, i decided i wanted to make something non-cheesy, which ended up being spicy garden tuna salad and roasted potatoes with rosemary after much searching. they weren't actually fattening but hey, dun't want to make the fam too fat. heh. i based both the recipes off of ones i found on greenlitebites.com.
the ingredients for the spicy garden tuna salad are simple. no-fat yogurt, lime juice, cilantro some kosher salt, red/green peppers, carrots, tuna and jalapenos. as you can see in the picture above, i used albacore instead of tuna because while shopping at the supermarket, mum told me we already had "tuna" at home. turns out, it wasn't exactly tuna, but it was all good. there are no procedures, you just chop up everything that has to be chopped, throw them together and mix. add as much or as little of whatever you want.
peel/shave the carrots if you don't like them chunky in the salad. works like a charm.

the roasted potatoes were supposed to be used with colored potatoes, but as it is, the ones in the supermarket were sitting on the shelf all shriveled up in all its grossness. yuck. ordinary ones work fine...just not as pretty. for this recipe, you just need potatoes, carrots, onion, olive oil and rosemary. (kosher salt to taste). toss it all together, set oven to 425 F and bake for 50 minutes. this was my first time working with rosemary, but let me tell you, i LOVE that stuff. smells so good. i have a ton leftover from this recipe and i totally plan to use it sometime soon. perhaps with some bread. mmm.
anyway, all in all, everything was eaten with much gusto, even with unexpected guests over. the only minor glitch was my terrible mixing skills that caused my poor friend to gag on a bite of jalpenos in the salad. ("it's killing my tastebuds! ahhh! water!" oops.) besides that, my brother practically finished all the potatoes and only a small bowl of tuna salad sits in the fridge. <happiness> oh yeah, just wanted to add, fatty thursday/blog posts will be on hold til september, since i am chicago-bound in two days! (well actually i might post something un-food related before i leave, we'll see). so very excited that i'm finally getting to travel by myself; this is my first time away from home for like camp. expecting the madre to tear up. hehe.
